Pineapple Coconut Dream Cake
Ingredients:
Cake:
1 cups all-purpose flour
1 cup granulated sugar
cup unsweetened shredded coconut
1 tsp baking powder
tsp baking soda
tsp salt
cup unsalted butter, softened
2 large eggs
1 cup crushed pineapple, drained
cup coconut milk
1 tsp vanilla extract
Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
cup coconut milk
1 tsp vanilla extract
cup toasted shredded coconut for garnish
Directions:
Prep: Preheat oven to 350F 175C. Grease and flour a 9-inch round cake pan.
Dry Ingredients: Mix flour, sugar, shredded coconut, baking powder, baking soda, and salt.
Cream Butter: In another bowl, beat butter until fluffy, adding sugar gradually.
Add Eggs: Add eggs one at a time, beating well.
Combine: Alternately add dry ingredients and pineapple mixture pineapple, coconut milk, vanilla.
Bake: Pour batter into the pan; bake for 25-30 minutes. Cool completely.
Frosting: Beat butter, powdered sugar, coconut milk, and vanilla until smooth. Frost cake and garnish with toasted coconut.
