Pesto Pasta with Chicken
Ingredients:
12 oz pasta of choice spaghetti, penne, etc.2 boneless, skinless chicken breasts, cooked and sliced1 cup fresh basil leaves1/4 cup pine nuts or walnuts2 cloves garlic1/2 cup Parmesan cheese, grated1/2 cup extra virgin olive oilSalt and pepper to tasteFresh basil for garnish optional
Instructions:
Cook pasta according to package instructions. Drain, reserving 1/2 cup of pasta water.In a food processor, combine basil, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.With the processor running, slowly stream in olive oil until the pesto reaches a smooth consistency. Season with salt and pepper.Toss the cooked pasta with the pesto, adding a bit of reserved pasta water to loosen the sauce if needed.Add the sliced chicken on top of the pasta and toss gently.Garnish with fresh basil and serve.
