Peach Upside-Down Cake
Ingredients:
4 tbsp unsalted butter, melted
1/2 cup packed brown sugar
2-3 ripe peaches, thinly sliced
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
1/4 cup milk
Instructions:
Preheat oven to 350F 175C and grease a 9-inch round cake pan.
Pour melted butter into the pan and evenly sprinkle with brown sugar.
Arrange peach slices in an overlapping pattern on the bottom of the pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another bowl, cream the softened butter and granulated sugar until fluffy. Beat in eggs one at a time, then mix in vanilla.
Gradually add the dry ingredients, alternating with sour cream and milk, until the batter is smooth.
Pour the batter over the peach slices and spread evenly.
Bake for 35-40 minutes or until a toothpick comes out clean.
Let the cake cool for 10 minutes, then carefully invert onto a serving plate.
