Basic Cake Mix:

2 1/2 cups all-purpose flour

2 1/2 tsp baking powder

1 tsp salt

1 3/4 cups granulated sugar

1 cup unsalted butter, softened

Instructions to Prepare Cake Mix:

1 batch of the basic mix

1 cup milk

2 large eggs

1/3 cup unsweetened cocoa powder

1/4 cup hot water

Dissolve cocoa in hot water, then mix with other ingredients. Bake at 350F 175C for 30-35 minutes.

To Make Lemon Cake:

1 batch of the basic mix

2 large eggs

3/4 cup milk

1/4 cup fresh lemon juice

1 tbsp lemon zest

Mix all ingredients and bake at 350F 175C for 30-35 minutes.
