Parchment Baked Salmon
Ingredients:
4 salmon fillets1 tbsp olive oil1 lemon, sliced2 cloves garlic, minced1 tsp dried thyme or rosemarySalt and pepper to tasteFresh parsley for garnish optional
Instructions:
Preheat the oven to 375F 190C.Cut 4 large pieces of parchment paper, each large enough to fold over a salmon fillet.Place a salmon fillet in the center of each parchment paper piece. Drizzle with olive oil, and sprinkle with garlic, thyme or rosemary, salt, and pepper.Top with lemon slices.Fold the parchment paper over the salmon and crimp the edges to seal, forming a packet.Place the packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.Carefully open the parchment packets and garnish with fresh parsley.
