Experience a luscious treat that celebrates chocolate and berries in every bite! Perfect for gatherings or a sweet night in!
Ingredients:
– 1 cups heavy whipping cream cold
– 2 cups chocolate cookie crumbs about 24 cookies, finely crushed
– cup melted dark chocolate cooled slightly
– 16 oz cream cheese softened
– 1 cup powdered sugar
– cup unsalted butter melted
– 1 cups mixed berries cherries, raspberries, and blackberries, fresh or frozen
– cup granulated sugar
– 1 tbsp lemon juice
– 1 tbsp cornstarch mixed with 2 tbsp water
– Optional: chocolate shavings or curls, whipped cream, and fresh berries for garnish
Instructions:
1. Prepare the crust: In a mixing bowl, combine the chocolate cookie crumbs and melted butter, mixing thoroughly until the crumbs are evenly moistened. Pack the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Once done, place the pan in the freezer to allow the crust to set while you prepare the filling.
2. Make the cheesecake filling: In a large bowl, blend the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is smooth and creamy. In a separate bowl, whip the heavy cream until it reaches stiff peaks. Gently fold the whipped cream into the cream cheese mix until fully blended. Next, fold in the cooled melted chocolate, ensuring a smooth consistency. After the filling is ready, spread it evenly over the chilled crust, using a spatula to smooth the surface. Refrigerate for at least 6 hours or preferably overnight for the best results.
3. Prepare the berry topping: In a saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Stir gently as the berries heat up and begin to release their juices. Add the cornstarch mixture and continue to stir for 23 minutes, allowing the topping to thicken. Once thickened, remove from heat and let it cool completely.
4. Assemble the cheesecake: Once the cheesecake has set, carefully remove it from the springform pan and place it on a serving plate. Spoon the cooled berry topping evenly over the cheesecake. If desired, add chocolate shavings, whipped cream, and additional fresh berries for garnish before serving.
