Mini Pineapple Upside-Down Cakes Recipe

Ingredients

2 boxes of pineapple-flavored cake mix

6 large eggs

1 cup of vegetable oil

2 cups of pineapple juice reserved from canned pineapple

2 sticks 1 cup unsalted butter

2 cups brown sugar

2 cans pineapple slices

1 small jar maraschino cherries

Directions

Prepare the Caramel

Heat the butter in a saucepan over medium heat until melted.

Add the brown sugar and stir until combined and smooth. Remove from heat.

Prepare the Molds

Lightly grease the cupcake molds with a bit of oil using a paper towel to prevent sticking.

Add a spoonful of the caramel mixture to each mold.

Add Pineapple and Cherries

Drain the pineapple slices, reserving the juice for the cake batter.

Cut each pineapple slice into 8 small pieces. Place 3 pieces in each mold.

Cut each maraschino cherry in half and place half a cherry in the center of each mold.

Prepare the Cake Batter

Preheat the oven to 350F 175C.

In a large bowl, combine:

Cake mix from 2 boxes

6 eggs

2 cups pineapple juice

1 cup vegetable oil

Mix thoroughly using a hand mixer until smooth and lump-free.

Fill the Molds

Pour the batter into each mold, filling them about one-third full to allow room for the cakes to rise.

Bake

Place the molds in the preheated oven and bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Unmold

Remove the molds from the oven and let them cool for 10 minutes.

Carefully unmold the cakes by inverting the molds onto a plate or cooling rack.

Do not leave the cakes in the molds for too long, as they may stick.
