Maple Bacon Roasted Sweet Potatoes
Ingredients:
3 large sweet potatoes, peeled and cubed
6 slices bacon, cooked and crumbled
2 tablespoons olive oil
1/4 cup pure maple syrup
1 teaspoon cinnamon
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh rosemary, chopped optional
1/4 cup chopped pecans optional
Directions:
Preheat oven to 400F 200C. Line a baking sheet with parchment paper.
In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, smoked paprika, salt, and black pepper.
Spread the sweet potatoes evenly on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and caramelized.
In the last 5 minutes of roasting, sprinkle the crumbled bacon over the sweet potatoes and return to the oven.
Remove from oven and garnish with fresh rosemary and pecans if using. Serve hot!
