Ingredients:

– 200 g mango puree fresh or canned

– 200 ml heavy cream chilled

– 50 g powdered sugar

– 5 g gelatin powder

– 2 tbsp water for blooming gelatin

– 100 g white chocolate chopped

– 100 ml water

– 100 g sugar

– 5 g gelatin powder for mirror glaze

– 2 tbsp yellow food coloring optional

– Fresh mango slices for decoration

– Ruby grapefruit segments for decoration

– Whipped cream for topping

– Fresh mint leaves for garnish


Instructions:

1. Begin by preparing the mango mousse. In a small bowl, bloom the gelatin by sprinkling it over 2 tablespoons of water and allowing it to sit for 5 minutes. Gently warm the mixture until the gelatin dissolves completely.

2. In a separate mixing bowl, combine the mango puree with the dissolved gelatin, stirring until smooth and well-blended.

3. In another bowl, whip the chilled heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until you achieve stiff peaks.

4. Carefully fold the mango-gelatin mixture into the whipped cream, being gentle to maintain the mousses fluffy texture.

5. Pour the mango mousse mixture into dome-shaped silicone molds, filling them about three-quarters full. Freeze the molds for at least 4 hours or until the mousse is completely set.

6. Next, prepare the mirror glaze. Bloom the gelatin again in 2 tablespoons of water as before. In a saucepan, combine sugar, 100 ml of water, and sweetened condensed milk. Heat the mixture over medium heat, stirring until the sugar dissolves.

7. Remove the saucepan from the heat, and stir in the bloomed gelatin until fully dissolved. Then, add the chopped white chocolate and stir until completely melted and smooth. For a vibrant finish, mix in the yellow food coloring if desired.

8. Allow the glaze to cool to 30-35C 86-95F before using it.

9. Once the mousse domes are fully frozen, carefully remove them from the molds. Place them on a wire rack with a tray underneath to catch drips.

10. Drizzle the cooled mirror glaze over each dome, ensuring an even coating. Allow the domes to sit for about 5 minutes to let the glaze set.

11. For decoration, top each dome with a dollop of whipped cream, a slice of fresh mango, a segment of ruby grapefruit, and a sprig of mint for a beautiful finish.

12. Serve the domes after allowing them to thaw in the refrigerator for 2-3 hours. Enjoy this light and refreshing dessert with friends and family!
