Lazy Day Lemon Cream Pie Bars

Ingredients:

For the Crust:

1 box yellow cake mix

1/3 cup melted butter

1 egg

For the Filling:

1 14 oz can sweetened condensed milk

1/2 cup lemon juice freshly squeezed for best flavor

1 tablespoon lemon zest

1 8 oz package cream cheese, softened

Optional Topping:

Powdered sugar for dusting


Whipped cream optional

Directions:

Preheat oven to 350F 175C. Grease or line a 9×13-inch baking dish with parchment paper.

In a bowl, mix together the cake mix, melted butter, and egg until a soft dough forms. Press evenly into the bottom of the prepared dish to form the crust.

In a separate bowl, beat the cream cheese until smooth. Add in the sweetened condensed milk, lemon juice, and lemon zest. Beat until creamy and fully combined.

Pour the lemon cream filling over the crust and smooth it out evenly.

Bake for 2530 minutes, or until the edges are lightly golden and the center is set.

Allow to cool completely, then refrigerate for at least 2 hours to firm up.

Slice into bars and dust with powdered sugar before serving. Add a dollop of whipped cream if desired.
