King Ranch Chicken Casserole

Ingredients:

3 cups cooked chicken, shredded

1 10.5 oz can cream of chicken soup

1 10.5 oz can cream of mushroom soup

1 10 oz can diced tomatoes with green chilies

1/2 cup onion, chopped

1/2 cup bell pepper, chopped

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

12 corn tortillas, cut into quarters


1 tsp chili powder

1/2 tsp garlic powder

Salt and pepper to taste

Instructions:

1 Preheat your oven to 350F 175C and grease a 9×13-inch baking dish.

2 In a large skillet, sauté the onion and bell pepper until softened. Add the shredded chicken, cream of chicken and mushroom soups, diced tomatoes, chili powder, garlic powder, salt, and pepper. Stir well.

3 Layer the bottom of the baking dish with a layer of tortilla quarters. Top with a layer of the chicken mixture, then sprinkle with shredded cheddar and Monterey Jack cheeses.

4 Repeat the layers with the remaining tortillas, chicken mixture, and cheese.

5 Bake uncovered for 30-35 minutes or until the cheese is melted and bubbly.

6 Let it cool for a few minutes before serving.
