Keto Jalapeño Popper Casserole
Ingredients:
For the Casserole:
2 lbs chicken breast, cooked and shredded
8 oz cream cheese, softened
cup sour cream
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
6-8 jalapeños, deseeded and diced
teaspoon garlic powder
teaspoon onion powder
teaspoon smoked paprika
Salt and black pepper, to taste
For the Topping:
cup crispy bacon bits
cup shredded cheddar cheese
cup shredded mozzarella cheese
2 jalapeños, sliced
Directions:
Preheat the oven to 375F 190C. Grease a 9×13-inch baking dish.
Prepare the base: In a large bowl, mix shredded chicken, cream cheese, sour cream, cheddar, mozzarella, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until well combined.
Assemble the casserole: Spread the mixture evenly into the prepared baking dish.
Add the toppings: Sprinkle the remaining cheddar and mozzarella cheese over the top, followed by the crispy bacon bits and sliced jalapeños.
Bake uncovered for 20-25 minutes, or until bubbly and golden brown.
