Keto Cabbage Noodle Beef Stroganoff
Ingredients:
1 lb ground beef or thinly sliced sirloin
2 tablespoons butter
1 small onion, diced
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1 teaspoon Worcestershire sauce
1 cup mushrooms, sliced
1/2 head cabbage, shredded
1/2 cup beef broth
3/4 cup heavy cream
1/2 cup sour cream
1/2 teaspoon Dijon mustard
1/2 teaspoon xanthan gum optional, for thickening
1/4 cup grated Parmesan cheese optional
Fresh parsley, chopped for garnish
Directions:
Cook the Beef & Aromatics:
Heat butter in a large skillet over medium heat.
Add onions and sauté until soft about 3 minutes.
Stir in garlic and cook for 30 seconds.
Add ground beef, breaking it apart as it browns.
Season with salt, pepper, paprika, and Worcestershire sauce.
Add Mushrooms & Cabbage:
Stir in mushrooms and cook for 3-4 minutes until tender.
Add shredded cabbage and mix well.
Pour in beef broth and simmer for 5 minutes, stirring occasionally.
Make the Stroganoff Sauce:
Reduce heat to low and stir in heavy cream, sour cream, and Dijon mustard.
Sprinkle in xanthan gum, if using, to thicken the sauce.
Simmer for 3-5 minutes until the sauce is creamy and coats the beef and cabbage.
Serve & Garnish:
Sprinkle with Parmesan cheese if using and fresh parsley.
