Juicy Steak with Creamy Garlic Sauce
Ingredients:
For the Steak:
2 ribeye steaks about 1-inch thick
2 tablespoons olive oil
2 tablespoons unsalted butter
Salt and black pepper to taste
For the Creamy Garlic Sauce:
1 tablespoon unsalted butter
4 cloves garlic, minced
1/2 cup heavy cream
1/2 cup beef broth
1/4 cup grated Parmesan cheese
1/2 teaspoon dried thyme
Salt and black pepper to taste
1 tablespoon fresh parsley, chopped for garnish
Directions:
Prepare the Steak: Pat the steaks dry with a paper towel and season generously with salt and black pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the steaks and sear for 3-4 minutes per side for medium-rare adjust cooking time based on desired doneness. Add 2 tablespoons of butter to the skillet during the last minute of cooking, spooning the melted butter over the steaks. Remove the steaks from the skillet and let rest on a plate, tented with foil.
Make the Sauce: In the same skillet, reduce the heat to medium and add 1 tablespoon of butter. Sauté the minced garlic until fragrant, about 1 minute.
Stir in the beef broth, scraping up any browned bits from the skillet. Let it simmer for 2 minutes, then add the heavy cream, Parmesan cheese, and dried thyme. Stir well and let the sauce thicken for 3-4 minutes. Adjust seasoning with salt and pepper.
Return the rested steaks to the skillet, spooning the creamy garlic sauce over them to coat. Allow them to warm in the sauce for 1-2 minutes.
Garnish with fresh parsley and serve immediately with your favorite sides.
