Honey Mustard Chicken with Roasted Asparagus and Cheese

Ingredients:

For the chicken:

4 boneless, skinless chicken breasts

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

1 tablespoon apple cider vinegar

2 cloves garlic, minced

Salt and pepper to taste

For the roasted asparagus:

1 bunch asparagus, trimmed

1 tablespoon olive oil

Salt and pepper to taste

1/2 cup shredded mozzarella cheese

For garnish:

Fresh parsley, chopped optional

Directions:

Preheat the oven:


Preheat your oven to 400F 200C.

Prepare the chicken marinade:

In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, salt, and pepper.

Place the chicken breasts in a shallow dish and pour the marinade over the chicken. Cover and refrigerate for at least 30 minutes or overnight for more flavor.

Prepare the asparagus:

While the chicken marinates, place the trimmed asparagus on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.

Cook the chicken:

Heat a large oven-safe skillet over medium heat. Once hot, add the chicken breasts and cook for 4-5 minutes on each side until golden brown.

Once browned, transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165F 75C.

Roast the asparagus:

While the chicken is baking, place the asparagus in the oven on a separate baking sheet if needed and roast for 10-12 minutes, or until tender and slightly crispy.

Add cheese to the chicken:

During the last 3 minutes of baking, sprinkle shredded mozzarella cheese over the chicken breasts and return to the oven until the cheese is melted and bubbly.

Serve:

Serve the honey mustard chicken with the roasted asparagus on the side. Garnish with freshly chopped parsley if desired.
