Hibachi Chicken & Rice Skillet Meal
Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts, diced
1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp butter
1 clove garlic, minced
tsp ground ginger
tsp salt
tsp black pepper
For the Fried Rice:
2 cups cooked white rice preferably day-old
2 tbsp butter
1 tbsp soy sauce
1 tbsp sesame oil
2 eggs, lightly beaten
cup frozen peas and carrots mix
2 green onions, sliced
For the Yum Yum Sauce:
cup mayonnaise
1 tbsp ketchup
1 tsp garlic powder
tsp smoked paprika
1 tbsp rice vinegar
1 tbsp melted butter
Directions:
Prepare the Yum Yum Sauce: Mix all sauce ingredients in a bowl until smooth. Cover and refrigerate until ready to serve.
Cook the Chicken: Heat sesame oil and butter in a large skillet or wok over medium-high heat. Add diced chicken, soy sauce, garlic, ginger, salt, and pepper. Stir-fry for 6-8 minutes, until golden brown and cooked through. Transfer to a plate and keep warm.
Make the Fried Rice: In the same skillet, add butter and sesame oil. Sauté the peas and carrots for 2 minutes. Push to one side, pour in the eggs, and scramble until cooked. Stir in the rice, soy sauce, and green onions. Cook for another 3-4 minutes until heated through.
Combine and Serve: Return the cooked chicken to the skillet, mix everything together, and serve hot with yum yum sauce on the side.
