Ingredients:

– 1 cup crushed pistachios

– 1 cup all-purpose flour

– 1/2 cup unsalted butter, softened

– 1 cup raspberries fresh or frozen

– 1/2 cup granulated sugar

– 1/4 teaspoon salt

– 2 large eggs

– 1 teaspoon vanilla extract

– 1/2 teaspoon baking powder


– 1/4 cup powdered sugar for dusting, optional

Instructions:

1. Preheat your oven to 350F 175C. Grease an 8-inch square baking pan and line it with parchment paper, allowing some overhang for easy removal later.

2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 2-3 minutes of mixing.

3. Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition. Then, stir in the vanilla extract.
