Healthy Mexican Chicken Bake
Ingredients:
4 boneless, skinless chicken breasts
1 cup salsa
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels
1 cup shredded Mexican cheese blend
1/4 cup chopped cilantro
1 tsp cumin
1 tsp chili powder
1/2 tsp garlic powder
Salt and pepper to taste
Instructions:
Preheat oven to 375F 190C.
Season chicken breasts with cumin, chili powder, garlic powder, salt, and pepper.
Place chicken breasts in a baking dish and top with salsa, black beans, and corn.
Bake for 25-30 minutes, until chicken is fully cooked.
Sprinkle shredded cheese over the chicken and bake for an additional 5 minutes until the cheese is melted and bubbly.
Garnish with chopped cilantro before serving.
