Guava Coffee Cake Recipe

This tropical twist on a classic coffee cake features rich cream cheese, sweet guava marmalade, and a crumbly streusel topping. Its perfect for breakfast, dessert, or any occasion!

Ingredients:

Cake:

cup 113g unsalted butter, softened 杻

8 oz 225g cream cheese, softened 燎

1 cup 200g granulated sugar

cup 100g light brown sugar, packed

2 large eggs 讀

1 tsp vanilla extract

2 cups 315g all-purpose flour

2 tsp baking powder 療

1 tsp cornstarch

tsp salt 蓼

cup 120ml buttermilk 拏

cup guava marmalade plus more for drizzling

Streusel Topping:

1 cup 175g all-purpose flour

1 cup 200g granulated sugar

3 tbsp brown sugar

1 tbsp vanilla extract

tsp salt 蓼

10 tbsp 140g unsalted butter, melted 杻

Cream Cheese Glaze:

4 oz 113g cream cheese, room temperature 燎

cup 60g confectioners sugar, sifted

4 tbsp whole milk 拏

1 tsp vanilla extract

Instructions:

Prepare the Cake:


Preheat the oven to 350F 175C. Lightly grease a 139-inch 3323 cm baking pan with cooking spray and flour.

Cream the butter and cream cheese:

In a stand mixer or using a hand mixer, cream together the softened butter and cream cheese until smooth and creamy.

Add the sugars and eggs:

Beat in the granulated and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Mix the dry ingredients:

In a separate bowl, whisk together the flour, baking powder, cornstarch, and salt.

Combine the wet and dry ingredients:

Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until everything is well combined, but dont overmix.

Layer the batter and guava marmalade:

Spread half of the batter into the prepared baking pan it will be thick. Spread the guava marmalade over the batter, then dollop the remaining batter on top and gently spread it out with a spatula.

Make the Streusel Topping:

Prepare the streusel:

In a medium bowl, melt the butter. Stir in the flour, granulated sugar, brown sugar, vanilla, and salt until the mixture is crumbly.

Sprinkle the streusel:

Evenly sprinkle the streusel mixture over the cake batter.

Bake the cake:

Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Cream Cheese Glaze:

Make the glaze:

In a small bowl, beat the cream cheese until smooth. Add the confectioners sugar, milk, and vanilla extract, and mix until well combined and creamy.

Assemble and Serve:

Cool and glaze the cake:

Let the cake cool completely in the pan before drizzling with the cream cheese glaze. For extra guava flavor, drizzle more guava marmalade on top before serving.

Tips:

You can use guava paste if marmalade is unavailable, just warm it slightly to make it spreadable.

To enhance the tropical flavor, sprinkle a little coconut on top of the streusel before baking!
