Grilled Mushroom and Cheese Sandwich Recipe

Ingredients:

4 slices of sourdough bread or your choice

1 cup of fresh mushrooms, sliced button or cremini

1 small onion, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

2 cups shredded mozzarella or Swiss cheese

1 garlic clove, minced

Fresh thyme for garnish

Salt and pepper to taste

Instructions:


1. Sauté the Mushrooms and Onions:

Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Add onions and cook until caramelized and golden 5-7 minutes. Add mushrooms, garlic, salt, and pepper, and cook until mushrooms are soft and slightly browned. Remove from heat.

2. Assemble the Sandwich:

Butter one side of each bread slice. On the unbuttered side, layer shredded cheese, the sautéed mushroom and onion mixture, and another layer of cheese. Top with the other bread slice, buttered side facing out.

3. Grill the Sandwich:

Heat a skillet or grill pan over medium heat. Grill the sandwich until golden brown and crispy on both sides, pressing gently with a spatula to melt the cheese perfectly.

4. Serve with Style:

Cut diagonally for a visually appealing presentation. Garnish with a sprig of thyme and serve warm.
