Grilled Fish Tacos with Chipotle-Lime Dressing
Ingredients:
1 lb white fish fillets such as cod or halibut
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
Salt and pepper to taste
8 small corn tortillas
1 cup shredded cabbage
1/2 cup diced tomatoes
1/4 cup chopped cilantro
Lime wedges for serving
Chipotle-Lime Dressing:
1/2 cup sour cream
2 tbsp mayonnaise
1 chipotle pepper in adobo sauce, minced
1 tbsp fresh lime juice
1/2 tsp honey
Pinch of salt
Instructions:
Preheat grill to medium heat. Brush fish with olive oil and season with chili powder, cumin, paprika, garlic powder, salt, and pepper.
Grill fish for 3-4 minutes per side until flaky and cooked through. Set aside.
In a bowl, mix all the dressing ingredients until smooth.
Warm the tortillas on the grill or in a pan.
Assemble tacos with grilled fish, shredded cabbage, diced tomatoes, and a drizzle of chipotle-lime dressing. Garnish with cilantro.
Serve with lime wedges on the side and enjoy!
