Greek Chicken Pasta
Ingredients:
2 boneless, skinless chicken breasts, grilled and sliced8 oz pasta penne or rotini works well1 cucumber, diced1/2 cup cherry tomatoes, halved1/4 cup red onion, thinly sliced1/4 cup Kalamata olives, pitted and sliced1/4 cup feta cheese, crumbled1/4 cup olive oil2 tablespoons red wine vinegar1 teaspoon dried oreganoSalt and pepper to tasteFresh parsley for garnish
Instructions:
Cook pasta according to package instructions. Drain and set aside.In a large bowl, combine cooked pasta, grilled chicken, cucumber, cherry tomatoes, red onion, olives, and feta cheese.In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.Pour dressing over the pasta mixture and toss to combine.Garnish with fresh parsley before serving.
