Grandmas Skillet Pineapple Upside-Down Cake

Ingredients:

1/4 cup unsalted butter

3/4 cup packed brown sugar

6-7 pineapple slices canned or fresh

6-7 maraschino cherries

1 cup all-purpose flour

3/4 cup granulated sugar

1/3 cup unsalted butter, softened

1/2 cup milk

1 large egg

1 1/2 tsp baking powder

1/2 tsp salt


1 tsp vanilla extract

Instructions:

Preheat oven to 350F 175C.

In an ovenproof skillet, melt 1/4 cup butter over medium heat. Stir in brown sugar until dissolved and spread evenly across the skillet.

Arrange pineapple slices in the sugar mixture and place a cherry in the center of each slice.

In a bowl, cream softened butter and granulated sugar. Mix in the egg and vanilla.

Combine flour, baking powder, and salt, then alternate adding the dry ingredients and milk to the batter until smooth.

Pour the batter over the pineapple layer in the skillet.

Bake for 30-35 minutes or until a toothpick comes out clean.

Cool for 5-10 minutes before carefully inverting the skillet onto a serving plate.
