Grandmas Lace Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 tbsp light corn syrup
1 1/2 cups old-fashioned rolled oats
1 cup all-purpose flour
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp vanilla extract
Instructions:
Preheat oven to 350F 175C and line a baking sheet with parchment paper.
In a medium saucepan, melt butter over low heat. Add sugar and corn syrup, stirring until the sugar dissolves and the mixture is smooth.
Remove from heat and stir in oats, flour, salt, baking soda, and vanilla extract until well combined.
Drop teaspoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 8-10 minutes, or until the cookies are golden brown and crisp.
Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
