Easy Lemon Cookies
Ingredients:
1 box lemon cake mix
1/2 cup unsalted butter, softened
1 large egg
1 tbsp lemon zest
2 tbsp fresh lemon juice
Powdered sugar for rolling
Instructions:
Preheat oven to 350F 175C and line a baking sheet with parchment paper.
In a large bowl, combine the lemon cake mix, butter, egg, lemon zest, and lemon juice. Mix until a dough forms.
Roll tablespoon-sized portions of dough into balls and coat them in powdered sugar.
Place the dough balls on the prepared baking sheet, spaced about 2 inches apart.
Bake for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
