Golden Seared Cod with Herb Butter Sauce
Ingredients:
– 4 cod fillets about 6 oz each
– 2 tablespoons olive oil
– 4 tablespoons unsalted butter
– 2 cloves garlic, minced
– 1 tablespoon fresh lemon juice
– 1 tablespoon fresh parsley, chopped
– 1 tablespoon fresh dill, chopped
– Salt and pepper to taste
– Lemon wedges for garnish
Directions:
1. Prepare the Cod Fillets:
Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
2. Sear the Cod:
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the cod fillets in the pan. Sear for 3-4 minutes on each side until golden brown and the fish flakes easily with a fork. Remove the cod from the skillet and set aside.
3. Make the Herb Butter Sauce:
In the same skillet, reduce the heat to medium. Add the butter and minced garlic, cooking for 1-2 minutes until fragrant. Stir in the fresh lemon juice, parsley, and dill. Let the sauce simmer for 1-2 minutes until it thickens slightly.
4. Serve:
Return the seared cod fillets to the skillet, spooning the herb butter sauce over the fish. Cook for an additional 1-2 minutes to warm through. Garnish with lemon wedges and extra herbs, and serve immediately.
