Fresh Fruit Cheesecake

Ingredients:
For the crust:
2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
For the filling:
500g cream cheese, softened
1 cup sugar
3 large eggs
1 tsp vanilla extract
1/2 cup sour cream
For the topping:
Fresh fruits strawberries, blueberries, kiwi, cherries, etc.
1/4 cup apricot or strawberry jam
1 tbsp water

Steps:
1 Prepare the crust:
Preheat the oven to 175C 350F. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of a springform pan. Bake for 8-10 minutes, then let cool.
2 Make the filling:
In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream. Pour the filling over the cooled crust.
3 Bake the cheesecake:
Bake for 45-50 minutes or until the center is just set. Allow to cool at room temperature, then refrigerate for at least 4 hours or overnight.
4 Prepare the topping:
Arrange the fresh fruits decoratively on top of the chilled cheesecake. In a small saucepan, heat the jam and water over low heat until melted. Brush the glaze over the fruits for a shiny finish.
5 Serve:
Slice and serve chilled. Enjoy this delightful dessert!
