Ingredients:
– 1 cup of brown sugar
– 1 cup of unsalted butter
– 2 cups of chocolate chips semi-sweet or milk chocolate
– 1 cup of crushed peppermint candies
– 1 sleeve of saltine crackers
– 1 teaspoon of vanilla extract
– 1 cup of chopped nuts pecans or walnuts, optional
Instructions:
1. Begin by preheating your crock pot on low heat.
2. Line the bottom of the slow cooker with a layer of saltine crackers. Its okay if they overlap a bit.
3. In a saucepan over medium heat, melt the butter and brown sugar together, stirring constantly until the mixture reaches a gentle boil. Allow it to boil for 3 to 4 minutes without stirring.
4. Pour the gooey caramel mixture over the saltine crackers, ensuring every cracker is covered.
5. Close the lid and let it cook in the crock pot for about 2 hours. Dont lift the lid during this time to keep the heat trapped!
6. After 2 hours, sprinkle the chocolate chips evenly over the caramel-covered crackers. Close the lid again and allow them to melt, which will take about 15-20 minutes.
7. Once melted, gently spread the chocolate over the top with a spatula.
8. Finally, sprinkle crushed peppermint candies and nuts if using generously over the melted chocolate, pressing them down lightly to ensure they stick.
9. Let it cool completely before cutting into squares or breaking into pieces. For quicker cooling, place it in the refrigerator for about 30 minutes.
