Ding Dong Cake
Ingredients:
For the Cake:
1 box chocolate cake mix plus ingredients listed on the box
1 cup buttermilk replace the water for richer flavor, optional
For the Cream Filling:
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon salt
For the Chocolate Ganache:
1 1/2 cups semi-sweet chocolate chips
3/4 cup heavy cream
Directions:
Bake the Cake Layers: Preheat your oven to 350F 175C. Prepare the chocolate cake mix according to the box instructions, substituting buttermilk for water if desired. Divide the batter evenly between two greased and floured 9-inch round cake pans. Bake as directed, then allow the layers to cool completely.
Prepare the Cream Filling: In a medium saucepan over medium heat, combine the butter, sugar, evaporated milk, vanilla extract, and salt. Cook, stirring constantly, until the sugar has dissolved and the mixture thickens slightly. Remove from heat and let cool to room temperature.
Assemble the Cake: Place one cake layer on a serving plate. Spread the cream filling evenly over the top. Place the second cake layer on top, pressing gently to secure.
Make the Ganache: Heat the heavy cream in a small saucepan until it begins to simmer. Remove from heat and pour over the chocolate chips in a heatproof bowl. Let sit for 2-3 minutes, then whisk until smooth and glossy.
Glaze the Cake: Pour the ganache over the top of the cake, letting it drip down the sides for a beautiful finish. Use a spatula to spread evenly, if needed. Refrigerate for at least 1 hour to set.
