Decadent Chocolate Peanut Butter Layer Cake Recipe 樂
Ingredients:
For the cake:
2 1/2 cups all-purpose flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter softened
2 cups sugar
4 large eggs
1 1/2 tsp vanilla extract
1 cup buttermilk
For the peanut butter frosting:
1 cup creamy peanut butter
1/2 cup unsalted butter softened
2 cups powdered sugar
1/4 cup heavy cream
For the ganache:
1 cup dark chocolate chopped
1/2 cup heavy cream
For topping:
Mini peanut butter cups
Chopped pecans
Instructions:
1 Prepare the cake layers:
Preheat the oven to 350F 175C. Grease and line three 8-inch round cake pans.
In a bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Mix in vanilla.
Alternate adding the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients.
2 Bake the cakes:
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
3 Prepare the peanut butter frosting:
Beat the peanut butter and butter until smooth. Gradually add powdered sugar and cream until the frosting is fluffy.
4 Make the ganache:
Heat heavy cream until just simmering. Pour over the chopped chocolate and stir until smooth. Let cool slightly.
5 Assemble the cake:
Place the first cake layer on a stand, spread peanut butter frosting evenly, and repeat with the remaining layers. Drizzle the ganache over the top, letting it drip down the sides.
6 Decorate:
Top with mini peanut butter cups and chopped pecans for an extra indulgent touch.
7 Serve and enjoy:
