Chocolate Mocha Layer Cake Recipe
Ingredients:
For the cake:
2 1/2 cups all-purpose flour
1 cup cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter softened
2 cups sugar
4 large eggs
1 cup brewed coffee cooled
1 cup buttermilk
For the mocha frosting:
1 cup unsalted butter softened
3 cups powdered sugar
1/4 cup cocoa powder
2 tbsp instant coffee dissolved in 2 tbsp hot water
2 tbsp heavy cream
For the ganache:
1 cup dark chocolate chopped
1/2 cup heavy cream
For decoration:
Chocolate-coated coffee beans
Chocolate curls
Instructions:
1 Prepare the cake layers:
Preheat the oven to 350F 175C. Grease and line three 8-inch round cake pans.
In a bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
Mix in the coffee and buttermilk alternately with the dry ingredients.
2 Bake the cakes:
Divide the batter evenly among the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
3 Make the mocha frosting:
Beat the butter until creamy. Gradually add powdered sugar, cocoa powder, dissolved coffee, and heavy cream. Beat until smooth and fluffy.
4 Prepare the ganache:
Heat the heavy cream until simmering, then pour over the chopped chocolate. Stir until smooth and let cool slightly.
5 Assemble the cake:
Place one cake layer on a serving plate, spread a layer of mocha frosting, and repeat with the remaining layers. Frost the entire cake with the remaining frosting.
Drizzle the ganache over the top and sides of the cake for a beautiful drip effect.
6 Decorate:
Top with chocolate-coated coffee beans and chocolate curls for an elegant finish.
7 Serve and enjoy:
