Decadent Chocolate Chip Cannoli Cookie Cups
Ingredients:
For the Cookie Cup:
1 cup unsalted butter, melted
1/2 cup granulated sugar
1 1/4 cups packed brown sugar
2 large eggs, room temperature
1 1/2 tsp pure vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips
For the Cannoli Filling:
1 1/2 cups whole milk ricotta cheese, strained
8 oz mascarpone cheese
1 cup powdered sugar
1 tsp vanilla extract
3/4 cup mini chocolate chips, plus additional for topping
Optional Topping:
Melted chocolate drizzle 4 oz chocolate bar, melted
Directions:
Preheat the Oven:
Preheat your oven to 350F 175C.
Make the Cookie Dough:
In a medium bowl, mix the melted butter, granulated sugar, and brown sugar on low speed until smooth.
Add the eggs and vanilla extract, and mix until fully combined.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing after each addition.
Stir in the chocolate chips.
Shape the Cookie Cups:
Spray a muffin pan with baking spray.
Using a medium ice-cream scoop, place cookie dough into each muffin cup, pressing down gently to create a cavity in the center.
Bake the Cookie Cups:
Bake for 16-20 minutes, or until the edges are golden brown.
Remove from the oven and let the cookie cups cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely about 25-30 minutes.
Prepare the Cannoli Filling:
In a mixing bowl, beat together the ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract until smooth.
Fold in the mini chocolate chips. Refrigerate until ready to use.
Assemble the Cookie Cups:
Once the cookie cups are fully cooled, pipe the cannoli filling into the center of each cup using a piping bag or spoon.
Sprinkle additional mini chocolate chips on top and drizzle with melted chocolate, if desired.
Serve and Enjoy:
These delightful cookie cups are best served fresh but can be stored in the refrigerator for up to 3 days.
