Ingredients:

2 pounds yuca cassava, peeled and cut into 2-inch pieces4 cups water2 tablespoons olive oil2 cloves garlic, minced1 teaspoon salt1/2 teaspoon black pepper1 tablespoon fresh lemon juice optional, for garnishFresh cilantro, chopped optional, for garnish

Instructions:


In a large pot, bring the water to a boil. Add the yuca and salt, then cook for 20-25 minutes until the yuca is tender and can easily be pierced with a fork.Drain the yuca and transfer to a serving dish.In a small skillet, heat the olive oil over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant.Pour the garlic-infused oil over the cooked yuca.Season with black pepper, and garnish with lemon juice and cilantro, if desired.
