Crumb Cake Bars
Ingredients:
For the crumb topping:
1 cups 190 g all-purpose flour
cup 150 g granulated sugar
cup 115 g unsalted butter, melted
1 tsp cinnamon
For the cake base:
1 cups 190 g all-purpose flour
cup 150 g granulated sugar
tsp baking soda
tsp baking powder
tsp salt
cup 120 ml buttermilk or substitute with milk tsp lemon juice
cup 115 g unsalted butter, softened
1 large egg
1 tsp vanilla extract
Directions:
Preheat the oven:
Set your oven to 350F 175C. Line a 9×9-inch baking pan with parchment paper or lightly grease it.
Make the crumb topping:
In a medium bowl, mix the flour, sugar, melted butter, and cinnamon until the mixture forms coarse crumbs. Set aside.
Prepare the cake base:
In a large bowl, combine the flour, sugar, baking soda, baking powder, and salt.
Add the buttermilk, softened butter, egg, and vanilla extract. Mix with a hand or stand mixer on medium speed until smooth and creamy, about 2 minutes.
Assemble the bars:
Spread the cake batter evenly into the prepared pan.
Sprinkle the crumb topping evenly over the batter, covering it completely.
Bake:
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The crumb topping should be golden and slightly crisp.
Cool and serve:
Let the bars cool completely in the pan before slicing into squares. Dust with powdered sugar for an extra touch, if desired.
