Crispy Pork Belly Bites

Ingredients:

2 lbs pork belly skin-on, cut into 1-inch cubes

1 tablespoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

teaspoon cayenne pepper optional for heat

1 tablespoon olive oil

1 tablespoon rice vinegar

1 teaspoon baking powder helps with crispiness


Directions:

Preheat your oven to 425F 220C.

Pat the pork belly cubes dry with paper towels and place them in a large bowl.

Toss the pork belly with salt, black pepper, garlic powder, smoked paprika, cayenne pepper if using, olive oil, rice vinegar, and baking powder.

Arrange the pork belly pieces on a wire rack over a baking sheet, ensuring they are spaced out for even cooking.

Roast for 40-45 minutes, flipping halfway through, until golden brown and crispy.

For extra crispiness, broil on high for 3-5 minutes at the end.

Remove from the oven, let them rest for a few minutes, and serve hot!
