Creamy Crockpot Beef Tips & Mushrooms
Ingredients:
2 lbs beef stew meat or sirloin tips, cubed
1 tablespoon olive oil
1 teaspoon salt
teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
8 oz cremini or button mushrooms sliced
1 small onion diced
3 cloves garlic minced
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon smoked paprika
cup heavy cream
2 tablespoons cornstarch mixed with 2 tablespoons water for thickening
cup sour cream
Chopped fresh parsley for garnish
Directions:
Heat olive oil in a skillet over medium-high heat. Sear the beef tips for 2-3 minutes per side until browned. Transfer to the crockpot.
Add mushrooms, onions, and garlic to the crockpot.
Pour in beef broth, Worcestershire sauce, thyme, smoked paprika, salt, and pepper. Stir to combine.
Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the beef is tender.
In the last 30 minutes, stir in the cornstarch slurry, heavy cream, and sour cream. Let it thicken.
Garnish with fresh parsley and serve over mashed potatoes, rice, or egg noodles.
