Crispy Chicken with Creamy Pasta
Ingredients:
For the Crispy Chicken:
2 large chicken breasts, pounded thin
1 cup all-purpose flour
2 eggs, beaten
1 cup panko breadcrumbs
cup grated Parmesan cheese
1 tsp garlic powder
tsp salt
tsp black pepper
tsp paprika
2 tbsp olive oil for frying
For the Creamy Pasta:
8 oz fettuccine or spaghetti
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
cup grated Parmesan cheese
tsp salt
tsp black pepper
tsp red pepper flakes optional
cup pasta water reserved
Fresh parsley for garnish
Directions:
Prepare the chicken: Season the chicken breasts with salt, pepper, and paprika.
Coat the chicken: Dredge each breast in flour, dip into the beaten eggs, then coat with a mixture of panko, Parmesan, and garlic powder.
Cook the chicken: Heat olive oil in a skillet over medium heat. Fry the chicken for 3-4 minutes per side until golden and crispy. Transfer to a plate.
Cook the pasta: Boil the pasta according to package instructions. Reserve cup of pasta water before draining.
Make the sauce: In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds. Pour in heavy cream and stir in Parmesan.
Combine: Add the cooked pasta and toss, adding reserved pasta water gradually for a smooth sauce. Season with salt, black pepper, and red pepper flakes.
Serve: Slice the crispy chicken and place it over the creamy pasta. Garnish with fresh parsley and extra Parmesan.
