Crispy Chicken Breast with Melted Cheese Filling 燎
Ingredients:
2 large chicken breasts
4 slices of cheese mozzarella or Swiss for melting 燎
1 cup all-purpose flour
2 large eggs 讀
1 cup breadcrumbs panko for extra crispiness
1/2 cup grated Parmesan cheese 燎
1/2 tsp garlic powder 龍
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley chopped, for garnish
Cooking oil for frying

Instructions:
1 Prepare the Chicken:
1. Place each chicken breast between two pieces of plastic wrap.
2. Pound the chicken gently with a mallet or rolling pin until about 1/2 inch thick.
3. Slice a pocket into the thick side of each breast, being careful not to cut through completely.
2 Add the Cheese:
1. Insert 2 slices of cheese into each pocket.
2. Secure the edges with toothpicks if needed to prevent the cheese from leaking.
3 Coat the Chicken:
1. Prepare three bowls:
Bowl 1: Add the flour.
Bowl 2: Beat the eggs.
Bowl 3: Mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
2. Dredge each chicken breast in the flour, dip into the eggs, and coat thoroughly with the breadcrumb mixture.
4 Cook the Chicken:
1. Heat oil in a skillet over medium heat.
2. Fry the chicken for 3-4 minutes on each side until golden brown and fully cooked internal temperature of 165F or 74C.
3. Place on paper towels to remove excess oil.
5 Garnish and Serve:
1. Transfer to a serving plate and garnish with fresh parsley.
2. Serve hot with your favorite side dish mashed potatoes, rice, or a fresh salad.
