Crispy Battered Fish Fillets
Ingredients:
For the Fish:
4 white fish fillets cod, haddock, or pollock
1 cup all-purpose flour
cup cornstarch
1 tsp baking powder
1 tsp salt
tsp black pepper
tsp garlic powder
tsp paprika
1 cup cold sparkling water
Vegetable oil for frying
For Serving:
Lemon wedges
Tartar sauce
Fresh parsley optional
Directions:
Prepare the batter: In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Gradually add in the cold sparkling water while whisking until a smooth batter forms.
Heat the oil: In a deep skillet or frying pan, heat about 2 inches of vegetable oil to 350F 175C.
Coat the fish: Pat dry the fish fillets with paper towels. Lightly dust each fillet with a little flour to help the batter stick. Dip each fillet into the batter, ensuring an even coating.
Fry the fillets: Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes per side, or until golden brown and crispy. Fry in batches to avoid overcrowding.
Drain & serve: Remove the fish from the oil and place on a wire rack or paper towels to drain excess oil. Serve immediately with lemon wedges and tartar sauce.
