Creamy Mushroom Chicken Bake
Ingredients:
3 large chicken breasts
2 tbsp olive oil
1 tbsp unsalted butter
2 cups sliced mushrooms
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 tsp dried thyme
Salt and black pepper to taste
Fresh thyme sprigs for garnish
Instructions:
1. Prepare the Chicken:
Preheat your oven to 190C 375F.
Season the chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium-high heat and sear the chicken breasts on both sides until golden brown. Remove and set aside.
2. Cook the Mushrooms:
In the same skillet, add butter and sauté the mushrooms until golden and tender.
Add minced garlic and cook for 1 minute until fragrant.
3. Make the Sauce:
Stir in the heavy cream, chicken broth, Parmesan cheese, dried thyme, salt, and pepper.
Simmer for 2-3 minutes until the sauce thickens slightly.
4. Assemble and Bake:
Place the seared chicken breasts in a baking dish.
Pour the creamy mushroom sauce over the chicken.
Bake in the preheated oven for 20-25 minutes or until the chicken is fully cooked.
5. Garnish and Serve:
Garnish with fresh thyme sprigs and serve hot.
