Beef Stroganoff Rigatoni

Ingredients:

300g rigatoni pasta

500g beef sirloin, cut into bite-sized pieces

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mushrooms, sliced

1 cup beef broth

1/2 cup sour cream

1 tbsp Dijon mustard

1 tsp paprika

1/4 cup Parmesan cheese, grated plus extra for garnish

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions:


1. Cook the Pasta:

Bring a large pot of salted water to a boil and cook rigatoni according to package instructions. Drain and set aside.

2. Prepare the Beef:

Heat olive oil in a large skillet over medium-high heat. Season the beef with salt and pepper.

Sear the beef pieces for 2-3 minutes on each side until browned. Remove from the skillet and set aside.

3. Make the Sauce:

In the same skillet, sauté the onion and garlic until fragrant.

Add the seared beef back into the skillet, along with the cooked rigatoni. Toss to coat evenly.

Sprinkle with Parmesan cheese and fresh parsley before serving.
