Cranberry Almond Biscotti
Ingredients:
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp almond extract
1 cup dried cranberries
1/2 cup sliced almonds
1/4 cup orange juice
Instructions:
Preheat oven to 350F 175C. Line a baking sheet with parchment paper.
In a large bowl, mix flour, baking powder, salt, and sugar.
In a separate bowl, beat eggs, vanilla extract, almond extract, and orange juice.
Gradually add the wet ingredients into the dry ingredients, mixing until a dough forms. Stir in dried cranberries and almonds.
Divide dough into two logs on the prepared baking sheet and flatten slightly.
Bake for 25-30 minutes until golden brown. Remove from oven and let cool for 10 minutes.
Slice logs into 1-inch pieces and place them cut side down on the baking sheet. Bake for an additional 10-15 minutes until crisp.
