Cranberry Almond Biscotti
Ingredients:
2 1/2 cups all-purpose flour1 tsp baking powder1/4 tsp salt3/4 cup granulated sugar1/2 cup unsalted butter, softened2 large eggs1 tsp vanilla extract1/2 tsp almond extract3/4 cup dried cranberries1/2 cup sliced almonds
Instructions:
Preheat oven to 350F 175C. Line a baking sheet with parchment paper.In a bowl, whisk together flour, baking powder, and salt.In another bowl, beat butter and sugar until creamy. Mix in eggs, vanilla extract, and almond extract.Gradually add the dry ingredients to the wet mixture. Fold in dried cranberries and sliced almonds.Divide the dough into two logs on the baking sheet and flatten slightly.Bake for 25-30 minutes, then let cool for 10 minutes. Slice logs diagonally into biscotti pieces.Arrange slices back on the baking sheet and bake for 10-15 minutes until golden and crisp.
