Cherry Almond Biscotti

Ingredients:

2 1/4 cups all-purpose flour1 tsp baking powder1/4 tsp salt1/2 cup unsalted butter, softened3/4 cup granulated sugar2 large eggs1 tsp vanilla extract1/2 tsp almond extract3/4 cup dried cherries1/2 cup sliced almonds

Instructions:


Preheat oven to 350F 175C. Line a baking sheet with parchment paper.In a bowl, whisk together flour, baking powder, and salt.In another bowl, beat butter and sugar until creamy. Add eggs, vanilla, and almond extract, and mix until well combined.Gradually add the dry ingredients to the wet mixture. Fold in dried cherries and almonds.Divide the dough in half and shape into two logs on the baking sheet. Flatten slightly.Bake for 25-30 minutes, then let cool for 10 minutes. Slice diagonally into biscotti pieces.Arrange slices back on the baking sheet and bake for 10-15 minutes until golden and crisp.
