Cowboy Cornbread Casserole

Ingredients:

2 packs of 59 cornbread mix

1.5 lbs ground beef

1 can Rotel undrained

1 can whole kernel corn drained

1 can ranch-style beans undrained

1 cup shredded cheese

1 pack taco seasoning


Instructions:

Prepare the cornbread mix according to the package instructions and set it aside.

Preheat your oven to 425F.

In a skillet, brown the ground beef, then drain the excess fat. Stir in the taco seasoning, Rotel undrained, ranch-style beans undrained, and drained corn. Let it simmer for about 5 minutes.

Mix the ground beef mixture into the prepared cornbread batter. Stir in the shredded cheese until fully combined.

Pour the mixture into a greased 9×13 casserole dish.

Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

For extra flavor, top with additional cheese, sour cream, salsa, or your favorite toppings. Enjoy!
