Classic Old-Fashioned Fudge
Ingredients:
2 cups granulated sugar
4 tablespoons unsweetened cocoa powder like Hersheys
1 stick 1/2 cup salted butter
5 ounces evaporated milk such as Carnation
1 teaspoon pure vanilla extract
Optional: 1/2 cup chopped nuts like walnuts or pecans
Directions:
Prepare the Sugar and Cocoa: In a medium saucepan, combine the granulated sugar and cocoa powder. Stir to break up any lumps in the cocoa for a smooth fudge texture.
Add Wet Ingredients: Add the stick of butter and the evaporated milk to the saucepan. Place the saucepan over medium heat and stir continuously until the mixture begins to boil.
Boil the Mixture: Once the mixture reaches a rolling boil, continue to stir and let it cook for about 7 minutes. This step helps the fudge thicken and ensures a smooth, creamy texture.
Remove from Heat and Flavor: After boiling, remove the saucepan from the heat. Stir in the vanilla extract and, if using, the chopped nuts. Stir the mixture vigorously for about 3 minutes; this helps it set properly and gives it a glossy finish.
Pour and Set: Pour the fudge mixture into a buttered 8×8-inch dish or a lined baking pan. Smooth the top with a spatula if needed. Let it cool at room temperature until fully set, about 2 hours. For faster setting, you can place the dish in the refrigerator.
Slice and Serve: Once set, cut the fudge into squares and enjoy! Store any leftovers in an airtight container at room temperature for up to one week.
