Christmas Green Chile Egg Casserole
Ingredients:
6 large eggs
1 cup milk
1 can 4 oz diced green chilies, drained
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup chopped green onions
1/2 cup cooked diced turkey or chicken optional
4 cups cubed bread stale or day-old works best
1/4 tsp garlic powder
1/4 tsp cumin
Salt and pepper to taste
Instructions:
Preheat oven to 350F 175C.
Grease a 9×13-inch baking dish and layer the cubed bread at the bottom.
In a bowl, whisk together eggs, milk, green chilies, garlic powder, cumin, salt, and pepper.
Stir in the cheese, green onions, and turkey or chicken if using.
Pour the egg mixture evenly over the bread cubes.
Cover and refrigerate for at least 30 minutes or overnight if making ahead.
Bake for 40-45 minutes, or until the casserole is set and golden on top.
