Christmas Gnome Cookies Recipe
Ingredients:
For the Cookie Dough:
1 cup unsalted butter softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
2 and 3/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
For the Royal Icing:
2 cups powdered sugar
1/4 cup meringue powder
1/4 cup water more as needed
Food coloring red, green, white, and black
For Decoration:
Candy eyes or small black icing dots
Sprinkles for accents, optional
Small candies for noses, optional
Instructions:
For the Cookie Dough:
Make the Dough: In a large bowl, cream butter and sugar together until light and fluffy. Add egg and vanilla extract, mixing until combined.
Mix Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Chill Dough: Wrap the dough in plastic wrap and chill for 30-60 minutes.
Roll and Cut: Preheat oven to 350F 175C. Roll out the dough on a floured surface to about 1/4-inch thickness. Cut out shapes using gnome-shaped cookie cutters or a simple triangle and circle for hats and faces.
Bake: Place cookies on a lined baking sheet and bake for 8-10 minutes, or until edges are lightly golden. Cool completely before decorating.
For the Royal Icing:
Mix Icing: In a bowl, mix powdered sugar, meringue powder, and water. Beat until stiff peaks form.
Color Icing: Divide the icing into separate bowls and tint with red, green, white, and black food coloring.
To Decorate the Gnome Cookies:
Create the Hat: Use red or green icing to create a gnome hat on each cookie.
Add the Beard: Use white icing to pipe the beard at the bottom of the gnomes face.
Add the Face: Use skin-toned or white icing to create the face in the middle of the gnomes beard.
Decorate the Details: Use black icing to add eyes or attach candy eyes. Use small candies for the nose.
Set Icing: Let the cookies sit for 1-2 hours to allow the icing to harden.
