Christmas Eggnog Bread
Ingredients:
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup eggnog
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup chopped pecans optional
Directions:
Preheat the Oven:
Preheat your oven to 350F 175C and grease a 95-inch loaf pan.
Mix Dry Ingredients:
In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, nutmeg, cinnamon, and salt.
Combine Wet Ingredients:
In a separate bowl, whisk together the eggnog, vegetable oil, eggs, and vanilla extract until well combined.
Combine Wet and Dry Ingredients:
Pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix.
Fold in the chopped pecans if desired.
Bake:
Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve:
Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
