Chocolate Covered Cherry Cookies
Ingredients:
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 1/2 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 cup cocoa powder
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1 jar 10 oz maraschino cherries, drained reserve juice
1 cup semisweet chocolate chips
1/2 cup sweetened condensed milk
Instructions:
Preheat oven to 350F 175C. Line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy.
Beat in the egg and vanilla extract.
In a separate bowl, whisk together flour, cocoa powder, salt, baking soda, and baking powder. Gradually mix into the wet ingredients.
Shape dough into 1-inch balls and place on baking sheets. Flatten slightly with your thumb and press a cherry into the center of each cookie.
In a small saucepan, melt chocolate chips with sweetened condensed milk over low heat, stirring frequently. Add reserved cherry juice 1-2 teaspoons to thin the mixture if needed.
Spoon chocolate sauce over each cherry-topped cookie.
Bake for 10-12 minutes. Let cool before serving.
